Palate: Earthy, wet forest floor, mineral, mossy, heathery moss, liquorice twig, Korean BBQ, goji berry

Finish: Spicy, savoury

Colour: Chablis

Nose: Foam bananas, fresh vasil, sweet wheat dough, biscuit forward, light sliced raddish, marzipan, cherry

Palate: pencil shavings, new notebook, new kitchen roll, saw dust, birch tree, lemon marmalade, lime pickle, bitterness

Finish: Medium herbal, tarragon

Colour: Brass

Nose: Dried fruity nose.  Lavender, Violet creams, waxy wine gums, over-ripe banana, canned pears, fruit cocktail (tinned), custard cream, toffee (after some time in the glass)

Palate: Honey, apricot, blood grapefruit, little bit tart on the tip of the tongue, really nice light macadamia nut, lime cordial, key lime pie

Finish: Bitter, aperitif, Campari, gentian, aperol (without the sweetness), negroni-ish

Nose: Savoury, salty, smoked fish, hint of sulphur (match stick), earthy, cheese rind, raclette, salt and vinegar crisps, balsamic vinegar, tesco finest salt and balsamic crisps

Palate: Liquorice twig, tobacco leaf, pipe tobacco, slate, graphite, raw twig, whittled wood, boy scout twig, woody, leather armchair, cigar after supper whisky, it is a travel on the Flying Scotsman type of whisky, Poirot, moustache oil

Finish: Musky, oily, we like

Colour: Vintage Champagne

Nose: Granny Smith apples, tart tatin, freshly sliced granny smith, cinnamon, apple crisps with cinnamon and nutmeg, crushed basil leaves

Palate: nutmeg, cinnamon, cloves, ginger ale, candied apple (American Halloween treat), lemon, rose pepper, candied lemon peel, lemon floor cleaner, lemon thyme

Finish: Herbaceous, lemon mint, light but lasting

Colour: Teak

Nose: Old rubber, overripe peach, stewed peach, dank wet wood, swampy cedar, swamp, papaya, bubble liquid, light petrol, green banana

Palate: Powdered citrus juice, tang, blue raspberry, sherbet dip, lemon Italian ice, muscovado sugar, fruity (tropical), papaya, guava

Finish: Papaya honey, sweet nectar

Colour: Burnished gold

Nose: Car sweets, pear drops, pear, meringue, tangy, red currant jelly, light shortbread, lilac, nectarine

Palate: Fresh tobacco leaf, almond croissant, citrus peel, blood grapefruit, fresh leather

Finish: One of the more elegant Ben Nevis’s we’ve tried

Colour: Pale Straw

Nose: Buttery, fake vanilla, wet bung cloth, hessian sack, butter popcorn, damp November evening, coal fire, old bothy damp floor, toasted marshmallow, old fishing equipment, rusty metal, damp Barbour jacket, early morning fishing trip

Palate: Sharp, rusty fence, sulphur but balanced, jaggy mid palate, tart blackberry, unripe fruitness, smoked cedar, bonfire, extra mature crumby cheddar, crunchy salt, parmesan, panfried sausage, griddled meat

Finish: Minerally, slate, highland burn, walk up a hill on highland

Colour: Benidorm Granny

Nose: Toffee apples, lots of lovely toffee, caramel, crème, cola cubes, earthy, potting soil, school glue

Palate: buttery, oily, gingerbread dough, toasted soft gingerbread with butter, pumpernickel, ginger cake, ginger snaps

Finish: Medium and ginger continuing.  Spicy and abrupt

Colour: Mahogany

Nose: Butter, Butterscotch, nutty, salty, salted nuts, peanut brittle, sesame snap, pretzel, Greek yoghurt, Scottish tablet, dried fruit

Palate: Cigar box, sweet plum, salty, savoury, buttery to begin but doesn’t last

Finish: Dates, raisins, dried fruit

Colour: Burnished auburn

Nose: Strawberry jam, cream, leather bookbinding, Sunday roast jus, beef stew, pot roast, soft sweet liquorice, after a while in the glass – madeira cake

Palate: brighter on the palate than the nose, stew juice, Cointreau, sweet, soft baked rhubarb pie

Finish: Walnut skin, dry finish

Colour: Chardonnay

Nose: Rose water, floral, orange blossom, orange fanta, Maraschino cherry, fresh linen

Palate: Very light and fruity, limoncello, stone fruit in pastry, French plum tart, leather tartness, wet wood, freshly sawn log
